The weather is JUST barely starting to cool down. Barely. Like six degrees. But I DECLARE THAT TO BE A SIGN OF FALL. Which means I can dive fully in to this week’s crock pot meal of Mississippi Pot Roast.
Out of all the recipes sent in and recommended, this was by far the most popular. While I’m not typically a roast kind of girl, the directions could not be any easier. So let’s give it a try. I’ll be using the recipe given to me by Becky. Here we go!
Week 2: Mississippi Pot Roast
Equipment:
Crock pot
Base Food:
Mississippi Pot Roast
Recipe (various sources)

3 lb chuck roast
-
4-5 pepperoncinis
-
1 packet of ranch dressing mix
-
1 packet of au jus mix
-
1 stick of butter
-
1/4 cup pepperoncini juice (optional)
Place roast in crock pot and add the pepperoncini juice, if desired. Sprinkle the ranch dressing and au jus mix over the roast. Slice butter in to pats and place on top of roast. Place pepperoncinis over butter. Cover and cook on low for 8 hours.

1 oz package ranch dressing mix

1 frozen veggie steamer of choice

What did we think?
THIS. WAS. SO. GOOD. It is actually so good my brain almost couldn’t understand what I was eating or why it was so good. Brandon ate like a starving man and absolutely loved it. It’s definite hearty winter food but it his SO MUCH FLAVOR. If you wanted to reduce the sodium, try using a low sodium au jus packet or eliminated it all together.
Overall 10/10. This is now going in to regular rotation.
