Don’t get me wrong, I’ve been excited about all these recipes. I mean, vetted food that I can make in a crock pot? SIGN ME UP. But I have to say I was seriously OVER THE MOON excited when this recipe came through. Are we ready to get a little tropical around here?! Say hello to this week’s recipe, Kalua Pork.
Week 6: Kalua Pork
Equipment:
Crock pot
Base Food:
Kalua Pork
Recipe (adapted from here)

3 pound shoulder pork roast
-
1 1/2 Tbs red Hawaiian Salt or coarse sea salt
-
1 Tbs liquid smoke
Prick roast with fork. Place in crock pot. Add liquid smoke and sprinkle with salt. Cook on low for 8-10 hours.
Meal 1: Rice Bowls
Kalua Pork
-Rice
-Diced Pineapple
-Lettuce
-Red onion
Meal 2: Street Tacos
Kalua Pork
-Small tortillas
-Red cabbage or lettuce
-Pineapple topping mix
Meal 3: Pork Sliders
Kalua Pork
-Hawaiian rolls
-Pineapple topping mix
-Spicy Mayonnaise
Spicy Mayonnaise
6 Tbs Mayonnaise
2 Tbs Sriracha
2 tsp white vinegar
Salt to taste
Mix well.
Pineapple Topping
2 cups diced pineapple
1/2 cup diced red onion
1/4 cup diced cilantro
1 diced chipotle from chipotle in adobo sauce
Juice from 1/2 lime
Mix well.
